Owner and Executive Chef Adriana Cavita states “Mexican food, with all the vibrant flavours, colours and textures is my life’s passion. As a Mexican chef I feel a responsibility to preserve and advance traditions, helping to educate people about my cuisine. I feel a deep respect for all the people who preserved the ancient methods and privileged to be able represent this in a new and reimagined way.”
What I love most about Cavita is how unapologetically thoughtful it is. There’s a belief here that food isn’t just flavour on a plate; it’s a force for change. Every ingredient is chosen with care, grown sustainably, sourced through fair trade practices, and celebrated in ways that honor the farmers and the land. Avocado, the butter of Mexico is not on the menu. Not because they forgot, but because importing this fruit in ways that harm people or ecosystems simply doesn’t fit the philosophy. It’s an ethos that quietly but powerfully underpins everything, making each bite feel meaningful as well as delicious.
And then there’s the vibe. Upstairs, the restaurant hums with energy and elegance. Downstairs, El Bar de Cavita flips the script. Dim lights, a perfect mix of intimate corners and buzz, and cocktails that hit smoky, bright, and smooth notes all at once.
